Since my sista Rori in L.A. also made pork chops and sauerkraut in a
crockpot recently, I thought I'd post a quickie recipe for you all
before it gets too warm to want to fire up the slow cooker. Measurements not needed.
Pork Chops with Sauerkraut, with Apple Flourish
First, heat some olive oil and caramelize some chopped onion. Brown your seasoned (salt & pepper) pork chops (humanely raised and bone-in) in the same pan.
I like to deglaze the pan with a few glugs of apple juice.
Pour a package of sauerkraut and all its juices (Being a faux New Yorker and all, I like Sabrett best) in a slow cooker and place the browned pork chops on top. Turn on low heat and cook for 6-8 hours, until the meat is falling off the bone. Sometimes I like to grate in a little apple. If liquid gets low, add some apple juice or water.
A pretty plate. Best to serve the meat and cabbage with a pile of mashed spuds.
